Located in the glamorous Berkeley Hotel, Boxwood Cafe exudes the cool sophistication of its Knightsbridge location with up beat New York luxury café dining.  The 120-cover restaurant and bar, which launched in May 2003, is headed by executive chef, Stuart Gillies who focuses on serving seasonal modern European dishes created from the freshest locally sourced ingredients.

Stuart’s passion and contagious drive was captured by Gordon Ramsay who immediately offered Stuart the reins to this innovative restaurant concept.  March 2008 saw Stuart, together with Gordon Ramsay, head up the launch of a fine dining restaurant at the newly designed Heathrow Terminal 5. Gordon Ramsay Plane Food is an 180-cover restaurant housed in the Richard Rogers designed building which offers unparalleled views of London’s skyline and a behind the scenes glimpse of the world’s busiest international airport. Gordon Ramsay Plane Food is Stuart’s most exciting and challenging project to date. 

Prior to this, Stuart spent a year as head chef alongside Angela Hartnett at her Michelin starred restaurant at The Connaught where he succeeded in transforming old classic French dishes into modern Italian creations. From 1998-2002 Stuart worked as head chef at Teatro in London and his experience also reflects considerable time spent at Aubergine as chef tournant in 1997, Daniel’s in New York (1995-1997), Le Caprice in London (1993-1995), Gravetye Manor (1991-1993) as well as a year in Rome at The Lord Byron Hotel (1990-1991) and three years in Stockholm, Sweden (1987-1989). 

At Boxwood Café, Stuart continues to concentrate on light, seasonal cuisine cooked with the finest ingredients drawn direct from the markets & small artisan producers. The restaurant is also known for Stuart’s seven-course Beauty Bites menu, which focuses on fresh, simple ‘super foods’ known for their beauty enhancing qualities.
